Santuario presents: Asado Course — Fire mastery guided by Chef Alejandro Zarate
Fire doesn’t just cook: it refines, teaches, and connects. In Santuario Restaurant, that magic took shape during our Asado Course, an experience designed for those who want to master the grill with the guidance of experts. The day was led by the Chef Alejandro Zarate, known for his technique and passion for asado, alongside the Chef Leo Peri, who added his talent and support at every stage of the process.
Authentic learning, straight from the embers
From daybreak, Santuario turned into a living workshop of aromas, lit charcoal, and cuts ready to transform. Participants were welcomed by Chef Zarate, who kicked off the course by explaining something essential: before grilling, you must understand fire.
We discussed the type of charcoal, the formation of embers, temperature control, and the perfect timing for each cut. Chef Leo Peri, with his hands-on, personable style, reinforced every explanation with examples and demonstrations on the spot.
